How to prepare Mango Pudding
I love desserts especially those ones having a mango flavor. I normally prepare this yummy Mango Kheer Recipe during the mango season. However, if Mangoes are not available you may also use the tinned variety of mango pulp which is available on shops throughout the year. This Kheer or Pudding is best served chilled.
How to prepare Mango Kheer? Given are the ingredients and method of preparation of this delicious pudding.
Ingredients of Mango Kheer
4 Cups Mango Puree
1 liter milk
150g basmati rice washed and stained
100g Sugar
50g raisins
50g chopped Cashew Nuts
50g finely chopped almonds
1 tsp rose water
1 pinch of saffron dissolved in a tsp of milk
1 tsp powdered cardamom
1 pinch salt
1 tsp chopped pistachio for Garnish
½ a Mango peeled and finely chopped for Garnish
Method of Preparation of Mango Pudding
Boil the milk in a large pan and once the milk starts rising lower the flame and add the rice and cook till soft by stirring regularly so that the rice does not stick to the bottom. After around 30 minutes or so add the sugar, salt, cardamom and saffron and remove from flame. Allow cooling. Once the rice is cool run the rice in a blender. Remove and Add mango pulp and the rest of the ingredients except those for garnish and mix well. Keep the mixture in the refrigerator. Serve this pudding chilled and garnished with chopped fresh mango and chopped pistachio. You may also use fresh cream if you wish.

@multifunctions I normally use Alphonso Mango or Pulp. But you can use any variety.
Haha! I'm type 2 like David Russell, but this rice-mango pudding looks pretty delicious. I'll try this one, a little slice will do little harm. I'll substitute some hard-to-find ingredients like the almond with cashew nuts for the garnish. I love cashew nuts! Thank you.
